I wish you all could experience the incredible aroma wafting through my house this evening. E just finished the initial phase of French onion soup preparation.
Imagine an enameled cast iron Le Creuset Dutch oven filled with onions and shallots caramelized in butter and then simmered in a broth of beef and chicken stock, apple cider, cognac, and white wine.
The soup is on the menu for Tuesday night's supper. I'll let you know how it tastes (I can already tell it's going to be amazing!).
